Comparative studies of plum cultivars Pozegaca and Cacanska rodna drying

The paper presents the comparative studies of plum cultivars Pozegaca and Cacanska Rodna drying in the process of convection drying at the experimental drier of the "Cer-Cacak" factory, Serbia (Yugoslavia), especially designed for this purpose. Cacanska Rodna prunes are of pleasant flavour and fine texture. However, this plum cultivar yields highly non-uniform fruits in terms of both size (22-44 g) and ripeness (16.60-21.40% of dry matter). It greatly aggravates the drying process, resulting in uneven fruit drying and thus in considerable amounts of waste. Since these effects in cv. Pozegaca are almost negligible due to its small fruits, it can be concluded that cv. Cacanska Rodna, grown in the conditions where no standard cultural practices were applied, is not quite suited to processing by drying, particularly in inductrial quantities. Namely, Cacanska Rodna fruits for drying must be produced in the conditions with fully applied cultural practices, as to obtain fruits of even size, ripeness, biochemical and mechanical characteristics.
