[Analysis of the effect of selected factors on the renneting of goat milk]

The study was conducted with 10 goats of the White Short-Haired breed in the 2nd lactation. Average milk efficiency was 924 kg. Individual samplings were conducted from day 46 to day 232 of the lactation. The following concentrations of milk components were measured: protein 2.71+/-0.3 %, casein 1.93+/-0.26 %, calcium 0.98+/-0.27 g/L, urea 4.34+/-1.24 mmol/L. The acidity was 5.33+/-0.99 SH, pH 6.77+/-0.12 and rennetability 101.5+/-51.44 s. We found significant relations between the rennetability and titrable acidity and between the rennetability and urea content and pH.
