Present state of quality of the rice produced in Aichi prefecture [Japan], and quality control undertaken by advanced agricultural cooperatives

In order to cope with a situation under the "New Food Law", we investigated the present state of the quality of rice produced in Aichi prefecture, as well as the quality control for rice undertaken by advanced agricultural cooperatives. The percentage of first grade quality rice (FGQR) in Aichi, had remarkably increased in recent years. Average FGQR% in Aichi from 1975 to 1991 wad 51.0%, which was 14% lower than that of national overage. Whereas, from 1992 to 1997, average FGQR% in Aichi increased up to 86.6%, which was 9% higher than that of national average. Latest data of 1996 and l997 indicated that FGQR% in Aichi reached higher than 90%. On the other hand we found some problems in moisture content of brown rice. Brown rice with moisture content lower than 14% or "excessively dried rice" in 1990 and 1991, accounted for about 40% of the bulk produce. Even in latest date of 1996 and 1997, it amounted to 20% and 25%, respectively. Percentage of excessively dried rice differed conspicuously among agricultural cooperatives. Protein content of brown rice in recent years mostly passed the upper limit of 7.7%, except in 1993 in which we had acold spell and less sunshine in summer. Protein content of brown rice differed significantly among rice production areas. Four advanced agricultural cooperatives had been successfully undertaking quality control to have rice with the highest FGQR%, and improved eating quality, and to get rid of excessively dried rice. They had been adopting measures choosing such as premium quality cultivars, block cultivation of each cultivar, use of certified seed and appropriate rice drying and preparation in larger scale facilities
