Thin layer drying characteristics of kidney beans

Thin layer drying characteristics of kidney beans were measured for several drying conditions involving five temperatures (25, 30, 35, 40, 45 degrees C) and several relative humidities between 15 and 40d for each temperature. It was confirmed that the drying of kidney beans was in the second falling rate period, because the drying characteristics curves showed that the drying rate fell off decreasingly, describing a gentle curve accordingly as the moisture content decreased. Using the measured data, parameter B1 was determined by applying a non-linear least squares method to an approximate solution of the diffusion equation and values of B1 were about 0.8. Therefore, the measured data were fitted to two exact solutions for the infinite plane sheet model in the diffusion equation by a non-linear least squares method, and the measured results agreed well with the calculated results. It was confirmed that the infinite plane sheet model for the diffusion equation was most suitable to describe the thin layer drying characteristics of kidney beans. An Arrherius type equation was used to relate the drying rate constant K of kidney beans to temperature T. and it had a good fit to the experimental data
