[The nutritive value of different fish species used as food]

Considering the high value of acquatic products including fish inwestigation were carried out to evaluate the nutritive quality of fish caught by the fishing fleet of the Joint Stock Company "Brivais Vilnis" (Free Wave) in Limbazi district (Latvia). Fresh-water fishes were taken from a fish-breeding farm. The investigation included the organoleptic evaluation as well as the analysis of food stuffs. The content of total proteins, carbohydrates Ca, Mg, fe was determined. The investigation results are analysed and presented in tables. It is stated that in Latvia fishing industry is a perspective branch of the national economy. The conditions for the cultivation of different fish species are favourable enough. Fish species having the highest food value are defined.
