[Carbohydrates in honey]

Carbohydrates are the main components of honey. 95-99% of honey dry matter consist of carbohydrates. In the given study the quality of nine different kinds of local honey and three kinds of honey from Denmark and Germany was investigated. In all the 12 samples the kinds of carbohydrates and their contents as well as the content of reducing sugars were determined. The content of reducing sugars was determined by the method based on establishing the optical density by means of photoelectrotintometer after the reaction of reducing sugars with potassium hexazianopherate. The experimentally obtained data were statistically processed with MS Excel 97.
