The correct use of varietal biological peculiarities of wheat and its various reactions to growing conditions is studied. The varieties of winter wheat of Ukrainian breeding are functionally oriented concerning agroecological growing conditions in various ways according to both the level of crop yield and realization of the genetic adaptive potential of resistance to negative environmental factors. The characteristics of the varietal adaptation potential is given, that can be used in various soil and climatic zones. The analysis of forming the wheat varietal structure according to the adaptation to different growing conditions in different agroecological zones testifies that modern varietal potential allows to obtain 23-25 million of tonnes of grain. The most important varietal special features of the wheat are clarified that determine the level of crop yield and adaptivity for the Steppe, Forest zone and Forest-Steppe. In order to obtain winter wheat grain competitive in domestic and world markets and to obtain 30 mln. tonnes of grain it is necessary to create and introduce new varieties of the intensive and semi-intensive type adapted to specific agroecological conditions
