Comparative follow up to micronutrients in vegetables in diet prescriptions and prepared diets

Recommendations for optimal nutrition have been changed in recent years, but in professional and scientific spheres is accepted the one of "five-a day" vegetables and fruits aiming to prevent disease and improve health (Williams, 1995). Analyzing whole-day diets in two vulnerable subgroups, adolescents and aging people, significant aberrations were determined concerning recent recommendations for daily consuming of mentioned foodstuff groups which is reflected in decreased intake of the main micronutrients - iron, zinc, magnesium and manganese. The same result is acquired through control of diets for patients with diabetes mellitus, cardiovascular and renal diseases (Monarov, 1980, 1989, 1991).
