Some experiences from the production and application of the aerated shortenings

The most modern automatic line for the production of different vegetable fats, shortenings, capacity 7,000 kg/hour was installed in "Vital" factory in Vrbas, Serbia (Yugoslavia). The line is equiped with one unit for the production of the aerated shortenings. In this paper the technological procedure of the aerated shortening production has been described. The comparative results of the functional properties of creams for wafel products filling with standard and aerated product have been shown. The aerated shortening, under the commercial name VITALINA, in the comparison with the standard shortening, possesses significantly better functional properties.
