The purpose of the present study is to be established in what extend the spread in production varieties meet the requirements of the bulgarian consumer.Biochemical and organoleptic evaluation of 12 Bulgarian and 8 foreign hybrida was made. It was established that the examined varieties do not differ significantly according to the analyzed biochemical and organoleptic properties.Comparatively low organoleptic evaluation demonstrates certain retreat from the varieties of Triumf, Kristi and Ideal type, regulated as first class, which were accepted by BSS 430-84. It is necessary to accent the efforts on the parallel development of the qualitative and quantitative components during the breeding of new varieties.
