[Bacteria of lactic fermentation. Present state and perspectives of their use as starter cultures]

According to the latest information, lactic acid bacteria exist in fifteen genera. They have been divided into three groups based on the ability to ferment substances: obligatory homofermentative, facultative heterofermentative and obligatory heterofermentative. Many lactic acid bacteria are producers of various substances with antimicrobial activity. They also have a positive effect on the human organism, such as to decrease lactose intolerance consequences, to stimulate the immunity system, to reduce cancer risk and blood cholesterol concentration. Molecular and genetic engineering enable to construct strains with improved bacteriophage resistance mechanisms. Altered genes are also transferred into lactic bacteria in order to study their metabolic activities.
