[Evaluation methods and objectivization of beef carcasses classification by the SEUROP system]

Crossbred bulls of Czech Pied cattle with beef breeds were slaughtered at the age of 501 days in average. The average daily weight gain was 1,041 g. Carcasses were classified according to the SEUROP classification system as follows: n=87; S=0 %; E=12.64 %; U=64.37 %; R=22.99 %; O=0 %; P=0 %. Statistically significant differences between classes were found especially for growth intensity, carcass length, circumference of hind leg, lean body mass, percentage of bones, and some other parameters. The lower meat to bone ratio was found in the class R (3.97), whereas the highest one was observed in the class E (4.28). Chemico-physical, nutritional, and technological properties of meat samples taken from musculus longissimus lumborum et thoracis were also evaluated. Correlations between carcass classification and meat qualitative parameters were calculated.
