In assuring the proper and stable quality of the products in the conserve industry the role of varieties - besides the highly-developed technology - has come to the fore. Economies producing for the industrial processing pay more and more attention to the demands of the processing industry. To develop an endproduct-oriented variety-structure of this kind in our fructiculture, the preceding evaluation - from the viewpoint of the conserve industry - of the plantable varieties is indispensable. With the development of alimentary sciences we gradually come to know those food-components (vitamins, mineral substances, colouring agents, antioxidative components, etc.) which are essential to the healthy functioning of the human organism, to the prevention of certain diseases and to the medical treatment.
