[Effect of soaking treatment in chemical solution on quality of dried ginger]

The study was conducted to find out the appropriate treatment to produce dried ginger to overcome the problem of mold growth. The preliminary treatment given to sliced ginger was soaked for 30 min. in the solutions of: 1. citric acid, 2. citric acid and sodium bisulphite, 3. citric acid and potassium sorbate, 4. potassium sorbate, 5. sodium bisulphite, and 6. control. The drying was done in the oven at 50-55 deg. C until water content about 10 percent. The analysis which were conducted moisture and ash content, essential oil content, pH, and microbiology within 0, 2, 4 weeks. The best quality results was obtained from ginger soaked in citric acid 5 percent and potassium sorbate 500 ppm which could retain the essential oil content from 3.55 percent to 3.330 percent within 4 weeks
