At testing the dependencies of physical properties on the moisture content it is necessary to have the biological materials with various moisture content. The grains and seeds can be moistened, dried in drier; alternatively the measurements can be realised gradually during the naturally decreasing moisture in many cases. Sorptive properties were observed on three varieties of pea seeds (Junak, Bohatyr and Olivin), and on two varieties of wheat ears (Danubia and Viginta). The drying can be realised in a drier at a constant temperature or gradually at ambient temperature. The moisture content of whole pea seeds was determined by gravimetric method. The samples were dried in drier at temperature 103oC - 105oC. The drying time was changed from one hour for seventeen hours. The moisture content was computed according to the relation 1.The method of distilled water addition was used for moistening of pea seeds. The paper also deals with relation for an additional mass of water, which was added into samples for obtaining the desired moisture content. The seed samples with the mass of water calculated according to the relation 2 were located in closed bottles in the refrigerator and they were mixed least 5-times per day. It was found that the time necessary for achievement asking and rectangular distribution of moisture content was two weeks. The wheat ears were distributed on the table at indoor temperature 24 degree C and their mass was determined every day. In this paper the dependence of the momentary value of moisture content on the drying time at constant temperature for a pack of pea seeds and the dependencies of the wheat ears mass on the time of natural drying are presented
