On-line carcasses quality measurements: a new generation equipment abilities

Value-based marketing of livestock will depend on accurate and practical method of determining carcass composition, as well as lean meat, fat and connective tissue quality. With this ability, producers can provide processors with the type of livestock they are seeking through targeted breeding and management practices. So, among emerging technologies, we can identify applied and basic technologies for on-line beef and pork carcass assesment and classification. Top applied instruments, such as different optical or video-image probes, are still ready for commercial use. On the other side, basic technologies are those requiring a long-term commitment for study and development. In the future, the most of developing technologies will be applied for lean meat, fat and connective tissue accurate quality determination. The aim of this paper is to present some of the new generation equipment abilities for on-line carcass/meat quality determination, as well as for carcass objective objective classification.
