The effect of live weight prior to slaughtering on yield and weight of retail carcass cuts

Investigation of the participation of major anatomical parts of carcass was carried out on male fattening cattle of Domestic Spotted breed and crosses of Domestic Spotted breed with Limousine with different recorded live weight prior to slaughtering. Results of the investigation indicate that by increase of live weight prior to slaughtering values such as carcass weight, weight of head and kidney fat are also increasing in young cattle of Domestic Spotted breed and crosses. The mass of muscle tissue in all investigated anatomical carcass parts in crossbreds of Domestic Spotted and Limousine breed is greater, and mass of bone tissue lower compared to the mass of same tissues in the carcass of Domestic Spotted young cattle.
