Quality of deer (Cervus elaphus L.) in different ecological systems

Hunting is very important economy branch, therefore the tendency is to increase the number of game. Deers are the biggest native ruminants of Yugoslav hunting fauna, represented in Europe and World. Ecosystem is of essental importance to population, mass and quality of deer. Ecosystem in Yugoslavia is suitable for deer. In this paper, the results of the investigation of the influence of two ecosystems (swamp and waterless) on quality of carcass and meat, post mortal and histological changes in certain deer muscles are presented. Quantitative and qualitative differences in regard to the carcass traits were determined in favour of animals from the swamp region.
