Six varieties of buckwheat (Fagopyrum esculentum) were cultivated in Ceske Budejovice during 1997-1999. No fertilizer were applied. Content of nitrogonous compounds was determined in buckwheat grains according to Kjeldahl. Content of amino acids was determined chromatographically after acid and oxidative-acid hydrolysis. The significance of variety influence on aspartic acid, threonine, glutamic acid, proline, alanine, isoleucine, leucine, tyrosine, phenylalanine and arginine contents by the analysis of variance was observed. Used varieties can be divoded into two groups: those with higher amino acids content and with lower amino acids content. Weather conditions during vegetation (mainly during the seeds formation, i.e. July and August) are an important factor influencing the protein and amino acids content.
