[Lean meat content estimations in pork sides of gilts and barrows]

Twenty gilts and twenty barrows of Large White and Landrace breeds were fattened up to 100 kg. Lean meat content (LMC) was assessed by FOM apparatus and dissection. Besides this, estimations were calculated on the basis of the values of loin muscle area at the 8th and 12th rib. LMC values were higher in gilts than in barrows assessed by FOM and dissection methods: 56.84+/-0.85 % vs. 54.24+/-0.78 % and 58.83+/-1.10 % vs. 55.21+/-1.51, respectively. The same effect of the sex was observed in muscle area evaluations, the values measured at the 12th rib were more similar to the dissection values than the ones obtained at the 8th rib.
