Cabbage, carrot and pickling cucumber varieties for fermented products

The objectives of this study were to find the varieties of cabbage, carrot and pickling cucumber best suited for fermentation processing and to investigate their cultivation and quality characterisrics. By cultivating cabbage varieties with different growing times and storing the late ones, it is possible to arrange a continuous supply of cabbage raw material from the end of July to May. 'Crispina' and 'Stimora-Mix' are high yielding varieties of pickling cucumber which, harvested regularly, give a yield of uniform quality for fermentation processing. The carrot variety 'Fontana', which is grown and processed by the Finnish food industry, in this experiment proved better than other big-rooted varieties suggested by breeders
