Our values: the flavour of Fragaria viridis. The author and his colleagues have examined the flavour-substance of Fragaria viridis with the help of a GC/MS chromatograph. In this work the latest SPME (micro extractor of solid phase) analytical method has been a great help. It makes the examination of a single strawberry possible without plucking it off the plant. Following the analysis of the natural strawberry flavour it is not easy at all to select the characteristic and important components, because almost each of them has a certain role in the development of the flavour.
