Detoxification effects of ammonium hydroxide on aflatoxin and total nitrogen content of maize

The effects of ammonium hydroxide on aflatoxin production and total nitrogen content of maize stored under laboratory conditions and the change of moisture content (m.c.) during the storage period were investigated simultaneously. Fifty grammes each of shelled maize var. Arjuna (m.c. 16.8 percent) was placed on a plastic screen container, hence they were put on the mouth of a jam bottle containing different concentrations of ammonium hydroxide, i.e. 0.5, 1.0, and 1.5 percent (v/v). Each of the jam bottle was then placed in a glass jar covered with a plastic (polyethylene) sheet, and stored at room temperature (28-30 deg. C). Two replications were used for each treatment. As control, maize was placed on a plastic screen container, and then put on the mouth of a jam bottle containing aquadest. Moisture, aflatoxin and nitrogen contents were analyzed before storage, and subsequently 12, 24, and 36 h after ammonia treatment. They were analyzed based on oven, thin layer chromatography and micro-Kjeldahl methods, respectively. The results showed that ammonium hydroxide increased slightly the m.c. of maize, decreased aflatoxin content and increased total nitrogen content. Moisture and total nitrogen contents increased along with storage duration, but aflatoxin content decreased. The lowest aflatoxin content was detected when the maize was treated with 1.5 percent ammonium hydroxide for 36 h
