Between 1992-95, slaughter value was recorded for 131 horses, 6 to 18 years of age (export classes I, II and III). Horses were purchased from individual farmers from the south-east region of Poland and were slaughtered at a commercial abattoir in Jaslo. Body weight and carcass weight significantly influenced the size of the carcass and carcass yield. The amount of meat, fat and bones in the half carcass could be estimated from linear carcass measurements such as width of carcass and thickness of flank. Thickness of fat in the neck was a good indicator of total carcass fat and meat fat content
