Using of capillary isotachophoresis for determination of biogenic amines in selected food products

Capillary isotachophoresis was used for the determination of biogenic amines in selected food products. Histamine, cadaverine, putrescine and tyramine were determined by the method. The highest content of histamine was found in a sample of frankfurters, 146.75 mg/kg, of cadaverine in a sample of Karicka Optim cheese, 666.36 mg/kg and of putrescine in soy sauce, 2156.44 mg/kg. The limits of determination for individual amines varied from 1 to 2.3 mg/kg. The recovery rate ranged from 95.4 to 104.9%
