The studies were carried out as 6 male lambs of each breed were slaughtered at 45, 90 and 180 days of age. The content of total phospholipids and their fatty acids content were studied. A significant decrease in the total content of phospholipids was observed from 45 to 180 days of age for the two breeds. The total content of phospholipids did not show considerable inter-breed differences. The fatty acids content of the muscle phospholipids was definitely constant. The differences in these characteristics between the breeds and the two muscle were weakly expressed.
