Milk and dairy products belong to the staple food and they are represented in various quantities in the daily energetic intake. Their consumption varries according to the age and physical activity of different population groups. In last decade number of studies indicate health effects of milk and dairy products. Majority of data are raised from laboratory studies, but nowadays human epidemiologic and even human intervention studies on effects of those products become available. Today, effects on immunostimulation by various milk constituents are studied, as well as, enhancement of bone density and prevention of osteoporosis, effects on growth and maturation etc. Fermented milk products with probiotic lactic acid bacteria cultures along with products fortified with dietary fibres and omega-3 fatty acids fougth their role in modern nutrition as novel food targeted even to dietetherapeutic interventions.
