Transformation of food trade substantially modifies structure and operation of the whole food chain. On the one hand, this study analyses some features of the trade concentration taking place in the developed countries; it is investigated on the other, how the Hungarian consumers' behaviour has changed to the effect of the establishment of hypermarkets and their market expansion.
