Sorbic Acid Contents Survey on Ham, Sausage and Dried Meat in Market

This study was performed to investigate the contents of nitrites in 450 meat products in Seoul from Jan. to Dec. in 2002. Sorbic acid contents of the samples were determined by Gas Chromatography. 67 samples of 450 were detected in sorbic acid contents. In each meat products, 65,6% in dried meats, 17.6% in bacon, 11.7% in hams, 11.7% in sausages, and 11.5% in meat can.
