Potential application of plant lipases in biotransformation of vegetable oils

Most studies on lipases in plants, have been directed towards isolation and characterization of these enzymes with a view to understanding their biological role. In this study an attempt has been made to explore the potential applications of such lipases in the preparation of added value products for vegetable oils (coconut oil/corn). So far microbial lipases have been widely used for lipid biotransformations. However, some unique properties of plant lipases and the relatively simple techniques of their isolation as partially purified or immobilized enzymes from cheap starting materials, such as haustorium of germinating coconut and Carica papaya latex, might stimulate their future use in a variety of areas of commercial interest. Results from this study showed that, lipases from haustorium of germinating coconut and C. papaya latex could serve as biocatalysts for lipolysis of triacyglycerols of coconut oil/corn oil for the preparation of fatty acids and specific acylglycerols
