Some analytical data on the quality of Polish buckwheat nuts

The content of crude protein, flavonoids and two essential minerals: magnesium and zinc were studied in dehulled seeds and the hulls of five varieties of Polish buckwheat nuts (Emka, Hruszowska, Kora, Luba, Panda). The crude protein in dehulled nuts oscillated from 12.8 to 14.0 percent of dry matter and in the hulls from 3.1 to 3.5 percent of d.m. The concentration of magnesium and zinc was similar in dehulled buckwheat seeds, whereas in buckwheat hulls the content of essential minerals was lower
