Some qualitative aspects of jujube (Zizyphus mauritiana Lamk.)

In assessing some qualitative aspects of jujube fruits, it was observed that edible portion constituted 88 percent of the total fruit weight. Regarding the sugar content the fruit contained 10.24, 4.36 and 5.89 g (per 100 g of edible tissue) of total, reducing and non reducing sugar, respectively. The brix was recorded to be 13.5. Malic acid was the major organic acid followed by malonic, fumaric, tarmaric and citric acids. Total, free and combined acid contents were 118.86, 53.00 and 65.86 mg/100 g, respectively.
