Xanthan gum production from coconut water

Pure coconut water is a suitable medium for xanthan gum production, from Xanthomonas campestris TISTR 840. Using coconut water as a fermentation medium can be done without having to control its pH. This is because coconut water has good buffering properties. When diluted coconut water (1:1 and 1:2) was used in fermentation, xanthan gum production was as high as that obtained from using pure coconut water but sucrose must be added as a carbon source to the diluted medium. It was also found than xanthan gum production was slightly increased when NaNO3 was added as a nitrogen source to the diluted coconut water. The optimum nitrogen concentration in the form of added NaNO3 was 0.03 percent (w/v).
