Comparison of quality and preference of some baby corn varieties for canning

Thirteen varieties of baby corn planted at Kasetsart University, Kampang San campus were canned. The canned samples were tested for qualities and consumer preference in texture, color, odor and taste. The result revealed that Thai superweet comp no.1 DMR baby corn which is the supersweet and open-pollinated variety with more than 80 percent resistance to the downy disease had low decreasing in percent TSS during canning process, and had the highest preference scores in texture, odor, and taste. These are due to its sweetness, beautiful yellow color and other good appearance.
