Fatty acids in the milk of goats from the Bulgarian white breed and their crosses with Togenburgh bucks

The study was carried out with bulk milk from two groups of goats: I group - Bulgarian White Dairy breed and II group - crosses of the purebred dairy breed with Togenburgh bucks. Milk samples were taken once per mounth during the pasture period. It was found that the total content of short-chain fatty acida in the goat milk was 24.0-25.7%.The milk of the crosses showed a higher content of saturated fatty acid (75.98%) compared to that of the purebred goats (74.2%). The levels of the middle chain (C12:0-C16:0) and long chain (over C18:0) fatty acids in the studied milk samples were very close (38.5-39.8%) and considerably higher than those of the shortchained ones (20.5-21.5%).The concentration of olies acid (C18:1) trans-izomers in the goat milk of the studied breeds was equal 2.5%. The amount of conjugated linolic acid (CLA) in the goat milk from the region of the Middle Balkans was 0.5-0.6 g/100 g fat.
