Fatty acid composition, content of trans fatty acids and lipid preventive score of edible margarines offered on the bulgarian market

The paper presents a study on the fatty acid composition, including trans-fatty acids content in 18 brands of table margarines (imported and of domestic production) offered on the Bulgarian market. The fatty acid composition and trans-fatty acid content were determined by gas chromatography with capillary and packed column after transformation of the fatty acids into methyl esters by trifluoride in methanol.The fatty acids groups and the ratios between them are calculated. The lipid preventive score is calculated with the formula of Richard, J. and Charbonnier, A.. An assessment is made of the balance of the fatty acid composition with a view on cardiovascular risk.
