In this paper characterization of storage proteins from six domestic soybean cultivars with regard to corresponding nutritive and functional properties is presented. The relationship between the solubility properties of soybean proteins and their composition is described. The investigated cultivars showed heterogeneity and significant differences in storage protein composition. The differences were most pronounced in high-protein cultivars and cultivar lacking KTI. Soybean protein structural changes provoked by extrusion were characterized.
