Nutritive value of promising varieties of rice grown in Konkan region

Chemical analysis of twelve promising varieties of rice revealed considerable genetic variation among the varieties with respect to proximate composition, protein quality and mineral composition. The variety KJT-1 recorded the highest protein content, (9.05%) while the variety RTN-3 contained the highest trytophan (1.85 g 100-1 g protein) in its grain protein. Protein fractionation studies revealed that the amount of globulin fraction was more than double the amount of albumin in rice protein. The nutritionally important minerals calcium and iron were higher in PNL-1, PNL-2 and KJT-3 varieties. The trytophan showed a highly significant positive correlation with grain protein and it was not limiting amino acid in the rice protein.
