Rapid determination of miso quality using near infrared spectroscopy

Calibration for measuring moisture, total nitrogen, and salt contents rapidly using near infrared Spectroscopy (NIR) was created. (1) Calibrations created by multiple regression analyzed 5 wavelength original spectrum data were most precise in calibrations analyzed by 5 kinds of methods in all components. (2) Highly positive correlation was found between the measured value and those predicted by the best calibrations for moisture, total nitrogen, and salt content. Each multiple correlation coefficients were 0.989, 0.968 and 0.978 for moisture, TN and salt, respectively. (3) Moisture and protein related wavelengths were obtained in the spectra of calibration measuring moisture and total nitrogen content. (4) Judging from number of wavelength, R, SEC and SEP, these calibrations have the potential for measuring miso quality and are useful for technical application.
