This study was conducted to determine the effects of harvest stage and nitrogen doses on yield, quality, leaf color and dry matter content of endive. In the experiment, scarole type was used. 0-60-120-180 kg/ha nitrogen and two harvest date were applied. According to the result, increasing the application doses of nitrogen and delaying harvest increased the yield. The highest yield was obtained from 60 kg N/ha dose in early harvest and 31810 kg/ha in second harvest. However nitrogen doses and harvest stage significantly influenced on perimeter, diameter, plant weight of endive. The maximum perimeter, diameter, plant weight obtained from 60 kg N/ha application
