Control of aflatoxin in maize with various moisture content by airtight storage and the population dynamic of microorganism involved

Maize with various moisture content (37, 30, 22.4 and 17.3 percent m.c.) were harvested at different maturity of 90, 100, 100 and 120 days after planting. These maize were tightly packed in jute bag, high density polyethylene bag (45 um) and polyethylene bag (125 um). The maize of 17.3 percent m.c. was also packed in the plastic tank of 3.5 mm thickness. High moisture maize of over 30 percent m.c. that were packed in every plastic containers could effectively prevent from A. flavus and aflatoxin. Maize of 22.4 and 17.3 percent that were packed in the plastic tank were free from aflatoxin but when these maize were packed in high density polyethylene bag and polyethylene bag lower infection of A. flavus and total fungi and much lower aflatoxin content than the maize which packed in the jute bag. High population of lactic acid bacteria was observed from maize with m.c. over 30 percent that were packed in the plastic containers and in 17.3 m.c. maize that packed in the plastic tank. This lactic acid bacteria was identified as Lactobacillus plantarum.
