Content of some free amines in grapes from Trentino

The work presents the content of putrescine, methylamine, ethylamine, histamine, cadaverine, 2-phenylethylamine, tyramine and tryptamine in ripe and sound grapes of red- (Lagrein, n = 6; Marzemino, 6; Rebo, 5; Schiava, 6; Teroldego, 6; Merlot, 22; Cabernet Sauvignon, 16) and white-fruited grape varieties (Chardonnay, 29; Pinot Grigio, 14; Nosiola, 6). The analysis was carried out by HPLC-FLD, after pre-column derivatization with OPA. Putrescine (median = 978 microng/l), methylamine (139 microng/l), ethylamine (110 microng/l) and histamine (74 microng/l) were in quantifiable amounts in all samples. The other amines were in lower concentrations, being quantifiable only in the 79, 42, 28 and 5% of the samples, respectively. Differences among the varieties and some correlations between amines and acidity parameters were observed

Si presentano i contenuti di putrescina, metilamina, etilamina, istamina, cadaverina, 2-feniletilamina, tiramina e triptamina, misurati in uve mature e sane di varietà a bacca rossa (Lagrein, n = 6; Marzemino, 6; Rebo, 5; Schiava, 6; Teroldego, 6; Merlot, 22; Cabernet Sauvignon, 16) e bianca (Chardonnay, 29; Pinot Grigio, 14; Nosiola, 6), raccolte a maturazione tecnologica. L'analisi è stata realizzata in HPLC-FLD, dopo derivatizzazione con OPA. Le principali amine presenti a livelli quantificabili in tutti i campioni, erano putrescina (mediana = 978 microng/l), metilamina (139 microng/l), etilamina (110 microng/l) e istamina (74 microng/l). Le altre amine in elenco erano presenti in concentrazione minore, superando il limite di quantificazione solamente nel 79, 42, 28 e 5% dei campioni rispettivamente. Sono state osservate anche alcune differenze tra le varietà e qualche correlazione con i parametri acidici dei mosti
