anglais. An analytical method was developed for the identification of processed fillets (anchovies in oil or salted anchovies) based on the analysis of nucleic acids. The method exploits the polymorphism of some sites in mitochondrial DNA, in particular in the cytochrome b gene. The species-specific variations are evidenced by PCR-RFLP, which identifies a specific restriction site present only in the amplicate of anchovies and not in the one of other species (gilt sardine and pilchard). The method was optimised to eliminate possible coamplicates. The sensitivity to anchovy DNA is very high and the positive signal is detectable up to 1.5 ng of DNA in PCR

È stato messo a punto un metodo di analisi per l'identificazione di acciughe in filetti trasformati (sott'olio o sotto sale) basato sull'analisi degli acidi nucleici. Il metodo sfrutta il polimorfismo di alcuni siti nel DNA mitocondriale, in particolare nel gene del citocromo b. Le variazioni specie specifiche sono evidenziate da PCR-RFLP, che individua un sito di taglio specifico presente solo nell'amplificato dell'acciuga e non in quello di altre specie (alaccia e sardina). Il metodo è stato ottimizzato per eliminare la presenza di coamplificati. La sensibilità al DNA di acciuga è molto elevata e il segnale positivo è rilevato fino a 1,5 ng di DNA in PCR
