Attitude survey on sake brewery rice for the Sake Brewing Companies in Hiroshima prefecture [Japan]

l. The author carried out the questionnaire survey to the sake brewing company in Hiroshima prefecture, to assist the review of sake brewery rice breeding in the future. There are two types in the sake brewery rice, one type has white core and is used for sake brewing only, another type has no white core and is used for sake brewing and boiled rice. The questionnaire survey was carried out on both types of the sake brewery rice. 2. The author send questionnaire to 53 sake brewing companies, there was the answer from 29 companies, and the collection rate was 55%. 3. The sake brewery rice have white core and is used for sake brewing only : The number of sake brewing companies which need the new original variety in Hiroshima prefecture and the companies which is sufficient in present varieties are almost the same number. This answer suggests that the sake brewing companies highly evaluate the present cultivars, and also expect to breed a new rice variety. 4. 'Hattan' and 'Omachi' group have problems of cracking easily, and breaking in the course of polishing. 'Senbonnishiki' has a producing white belly kernel in high abundance. 5. The sake brewery rice have not white core and is used for sake brewing and boiled rice : The number of sake brewing companies which need the new original variety in Hiroshima prefecture and the companies which is sufficient in present varieties are almost the same number. The sake brewing companies get used to the present rice varieties for years, however, the companies want to strongly appeal for the originality of sake, they strong request to breed the new rice cultivers. 6. The results of the questionnaire showed that every varieties have a few defects, and the varieties that the sake brewing companies want to use in the future was clarified. When we breed new variety, this data is useful.
