Phytic acid and mineral content of different varieties of corn

Chemical analysis of three different cultivars of corn was carried out at thelabs. of Agricultural Chemistry Department, NWFP Agricultural University,Peshawar, Pakistan during 2003-2004, to evaluate their nutritional significanceand elucidate the presence of an antinutritional constituent phytic acid. Thedata revealed that corn contained appreciable amount of all potential nutrientssuch as NFE, protein, fat, ash, fiber and total energy, as well as selectedminerals like Na, K, P, Ca, Mg, Zn and Fe. No significant difference in thesenutrients was observed among the cultivars of corn. Comparatively K was inhighest concentration among mineral elements in all varieties ranging 337 to345.67 mg/100g. Maximum amount of P (330.5 mg/100 g) was found in Hybridfollowed by Kisan (297.5 mg/ 100g) and Azam (288.5 mg/100 g). On average Mg,Na, Ca, Zn and Fe were in the range of 111.7 mg, 43 mg, 29.2 mg, 4.7 mg, 3.5mg and per 100 g, respectively. Hybrid maize contained highest amount 1.1%followed by 0.92% in Kisan and 0.70% in Azam. Positive correlation was observedbetween P and phytic acid. These findings can be considered to reduce the riskof malabsorption. Considering yield factor reduction in phosphate fertilizer isrecommended to minimize phytic acid content of corn.
