Content of anthocyanins and antixiodant activity in fruit of wild elder (Sambucus nigra L.) growing on different soils

Elder is a rich source of anthocyanins that act as natural antioxidants. They also show antibacterial and anticarcinogenic properties. Many agrotechnical factors influence on the content and antioxidant properties of anthocyanins. The study aimed at comparing the content of anthocyanins and their antioxidant properties in fruit of wild elder growing on two different soils. The soil objects Kortowo 1 and Kortowo 2 were characterized by different soil classes, soil reaction, content of humus and available microelements. It was found that fruit of wild elder growing at Kortowo I location were characterized by a higher content of anthocyanins and higher antioxidant activity than fruit of elder grown at Kortowo 2 location. Almost two times higher antioxidant activity was presented by extracts from fruit of elder growing at Kortowo 1 location. The pH values of the tested extracts showed small but statistically significant differences. The characteristics of location Kortowo 1 differ from those of location Kortowo 2 in the soil class, pH, humus level and available forms of some macroelements (nitrogen). It was stated that for black currant cultivated at two different soil locations the content of anthocyanins was 756 mg/100g and 1064 mg/100g dry mass respectively. According to data it was shown that even small differences in plants cultivation can increase or decrease the antioxidant properties polyphenolic compounds presence in fruit
