chinois.

Robertson Navel'orange (Citrus sinesis Osb. ) fruits were used to study organic acid-metabolizing enzymes during the fruit development, especially the changes in activities of citrate synthase (CS), phosphoenolpyruvateeaxboxylase (PEPC), cis-aconitase (ACO), isocitrate dehydrogenase (IDH) and malate dehydrogenase (MDH), in order to find out the key enzymes which influences the organic acid content in navel fruit. The results show that CS and PEPC play an important role in organic acid accumulation during the early stage of the fruit development, while IDH is the key enzyme that cleave citrate from 120 days after full bloom to the fruit ripening. However, MDH and CAO axe not the key enzymes that influence the organic acid accumulation.
