Technical value of sugar beet is a chemical and physical properties that effecting on sugar factor incomand cost of sugar production. The ideal form is that sugar beet must have high sugar content, that can be gaind as granulated sugar during processing but the sugar content alone can not be criteriu for sugar beet quality, molassesugar and extractable sugar. There is several compounds are characterised by molassigenic properties and/or influencethe purity of the extracted juce. The most important molassigenic compounds are K, Na and amino nitrogen. To estimate the amount of non-extractable sugar several formulars have been developed in Europe. In this paper valuation o beet based on qualitical results from purity of purified juices and purity of molasses ( Qm=60). The basis of molasses sugar in % of beet formed by equation of cecil. The coefficients equation y a bx 1 + bx2 +dx3 were ascrained by correlatin of analytical data of he same suagar beet samples(brei). The molasses sugar can be calculated as a quality criterion for Iran as following formular. Ms= 0.168 K +0.383 Na + 0.257 -N + 1.08 By using of analytical data of 39 samples the new formular compared with ten formulars of other contries.
