Use of a natural tracer combined with the analysis of its DNA to guarantee the authenticity of agro-food products: the authentifood system applied to typical dry-cured hams

anglais. In this paper we report the validation of the AuthentiFOOD system as an innovative instrument to guarantee the authenticity of any agro-food product. Here, we describe its application to the typical Italian PDO dry-cured ham industry. For this purpose, we have chosen an appropriate natural tracer (wheat flour) and studied its possible mixture and application with the fat used to grease the hams during the curing process. This tracer, whose genetic code is dependent on the wheat line used to produce it, can guarantee the Consortium protecting dry-cured ham from commercial frauds. As a matter of fact, just a small amount of tracer drawn from the ham at the sale point, by means of its DNA analysis, can reveal the authenticity of the ham. This authenticity/traceability system does not change any characteristic of the products, it is simple and impossible to counterfeit

Nel presente lavoro è stato applicato e convalidato il sistema AuthentiFOOD quale strumento innovativo per garantire l'autenticità di una filiera di un prodotto agroalimentare, in questo caso quella dei prosciutti tipici. A tal fine, è stato scelto un tracciante naturale appropriato (farina di frumento) miscelato alla sugna che viene utilizzata durante la stagionatura dei prosciutti crudi. Tale tracciante, il cui codice genetico è caratteristico della varietà di frumento utilizzata, garantisce il Consorzio di tutela del prosciutto crudo da eventuali frodi commerciali. Basta infatti un semplice prelievo del tracciante dal prosciutto per valutare, attraverso l'analisi del DNA, l'autenticità del prosciutto stesso. Questo sistema di autenticazione/tracciabilità non altera le caratteristiche del prodotto, è semplice e impossibile da imitare
