Toward a new fruit juice line with a high healthy power

anglais. In this study, consumer science techniques were suggested to support production and marketing of novel juices based on squeezed fruit without any stabilization treatment. These juices are projected to exploit the sensory and nutritional peculiarities of fresh fruits, to increase the consumption of products with a high content of natural antioxidants. A central location consumer test was performed to evaluate 4 prototypes chosen by a focus group indication. The consumers showed their preference and filled a questionnaire about habits and opinions on fruits and fruit juices. This study provides useful indication for further product development. In particular, it is a first step towards the definition of new juices that, supported by the information coming also from other research and development activities, could be marketed accompanied by three key messages: they are fresh and without any stabilization treatment, they have very good sensory characteristics and they are an interesting source of micronutrients

In questo lavoro è proposto l'utilizzo di tecniche di consumer science per ottimizzare le strategie produttive e di marketing di una nuova gamma di succhi ottenuti per semplice spremitura della frutta senza processi di stabilizzazione. Questi prodotti sono progettati per esaltare le caratteristiche sensoriali dei piccoli frutti e incrementare il consumo di prodotti ad alto contenuto di antiossidanti naturali. E' stato organizzato un test di mercato per testare 4 prototipi selezionati in base alle indicazioni di un focus group. I consumatori hanno espresso la loro preferenza e hanno compilato un questionario su abitudini alimentari e opinioni. Questo studio ha fornito utili indicazioni per l'ulteriore messa a punto di questi prodotti. In particolare, è un primo passo per la definizione di succhi che, utilizzando anche le informazioni ottenute da altre linee di ricerca e sviluppo tecnologico, possano essere veicolati attraverso tre messaggi chiave: sono freschi e senza trattamenti, hanno ottime caratteristiche sensoriali e sono un'importante fonte di micronutrienti
